As 312 is a beer that plays well with fruit, you can use raspberries or even strawberries in this summery salad.
1 sprig thyme (leaves only)
1 clove garlic
½ small shallot
2 tablespoons balsamic vinegar
¼ cup (2 ounces) 312 Urban Wheat
¼ teaspoon sea salt (+ more for additional seasoning)
½ teaspoon freshly ground pepper (+ more for additional seasoning)
⅓ cup olive oil
1 medium head butter (Bibb) lettuce
3 ounces goat cheese
1 cup (6-ounce package) blackberries
Handful of pistachios (roughly chopped)
Fresh chive blossoms (optional)
Makes 4 servings
COMBINE
1 sprig thyme (leaves only) + 1 clove garlic + ½ small shallot + 2 tablespoons balsamic vinegar + ¼ cup (2 ounces) 312 Urban Wheat + ¼ teaspoon sea salt + ½ teaspoon freshly ground pepper in a blender and process until smooth. With the motor running, gradually pour in ⅓ cup olive oil. Taste and add additional vinegar, salt, or pepper, to taste.
TOSS
1 medium head butter (Bibb) lettuce very gently with just enough of the vinaigrette to lightly coat leaves. Season with sea salt + freshly ground pepper to taste. Arrange the salad on 4 serving plates.
CRUMBLE
3 ounces goat cheese over salads and scatter 1 cup (6-ounce package) blackberries + handful of pistachios (roughly chopped) + fresh chive blossoms (optional) on top. Serve immediately.
