Slightly sweet, slightly gingery, and slightly tart: a perfectly balanced cocktail. —INGRAIN, Spring 2019

Go with a dry gin like Sipsmith London Dry or Letherbee Original Label to balance the sweetness of the cider. The ginger gives a bright back-hit of spice.
Makes 1 cocktail
2 ounces dry gin
2½ ounces Virtue Cider Michigan Apple
1 ounce fresh lemon juice
1 ounce simple syrup (equal parts sugar + water)
½ teaspoon freshly grated ginger
Sparkling water
PUT
1 large ice cube into a Collins or highball glass. Fill a cocktail shaker with ice.
ADD
2 ounces dry gin + 2½ ounces Virtue Cider Michigan Apple + 1 ounce fresh lemon juice + 1 ounce simple syrup + ½ teaspoon grated ginger.
SHAKE
Mixture a few times and strain cocktail into the glass. Top off cocktail with a splash of sparkling water, to taste, and serve.
