COCKTAILS: Midnight Stroll

Break out the sous vide immersion cooker to make this smooth cocktail. —INGRAIN, Winter 2018

The name says it all. Try it with Old Grand-Dad Bonded Bourbon.


Makes 1 cocktail


2½ ounces bourbon

¾ ounce Campari

¾ ounce sweet vermouth

¾ ounce Goose Island Bourbon County Brand Stout

4 drops Coffee Cardamom Bitters (ingredients + recipe below)

Orange peel


PLACE

Large ice cube in a cocktail glass.


STIR

Bourbon, Campari, vermouth, beer, and bitters together in another glass and pour everything into the cocktail glass. Garnish with the orange peel.

COFFEE CARDAMOM BITTERS


INGREDIENTS

½ cup dark rum

¼ cup whole coffee beans

1 teaspoon black peppercorns

6 cracked cardamom pods

2 tablespoons dark brown sugar


TOOLS

Sous vide immersion cooker

Gallon-size zip-top freezer bag

Eye-dropper bottle


PREHEAT

Sous vide water bath to 140°F.


PLACE

Rum + coffee beans + black peppercorns + cracked cardamom pods + dark brown sugar into a gallon-size zip-top freezer bag. Before you zip the bag, lower it into the preheated sous vide water bath to remove any air pockets.


COOK

Ingredients in bath for 1 hour. Cool, strain, and put your fancy bitters in one of those fancy little eye-dropper bottles.
