GROCERY LIST: Mul Naengmyeon (Ice-noodle Soup)

Serves 6 to 8


½ pound boneless beef brisket

1 medium onion

4 scallions

6 garlic cloves

2-inch-piece ginger

10 black peppercorns

2 tablespoons soy sauce

2 tablespoons apple cider vinegar

1 tablespoon Asian pear juice (optional)

1½ tablespoons sugar

2 to 3 cups dongchimi brine (radish water kimchi brine)

Naengmyeon noodles (12 to 16 ounces; 2 ounces per person)

Geoja (hot mustard paste)

Kosher salt (or sea salt)


To serve: 2 cucumbers (Korean or Persian) + 2 Asian pears + Pickled radish (optional) + Hard-boiled eggs (4 to 6)


Pairing Natural Villain (Goose Island) or a Czech or German pilsner
