RECIPE: Jalapeño Poppers

Cheesy, spicy goodness is what these jalapeño poppers scream during your Super Bowl (or any) party. —INGRAIN, Winter/Spring 2020



Turned inside out, these poppers rely on a spiced cream cheese mixture and a variety of make-your-own toppings. Instead of breading and deep frying, these are baked with a sprinkle of something crispy as the final play.


Pairing So-Lo (Goose Island)


Serves 6


12 large jalapeños

8 ounces cream cheese

½ teaspoon ground cumin

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne

¼ teaspoon sea salt


PREP

12 large jalapeños by cutting about ⅓ of the top off each pepper (lengthwise; they will look like little boats) and remove the seeds and membrane (reserve tops for garnish). Preheat oven to 425°F.


PLACE

8 ounces cream cheese (room temperature) + ½ teaspoon (each) ground cumin + garlic powder + onion powder in a large bowl. Season with ¼ teaspoon (each) cayenne + sea salt (or to taste) and mix together until well combined.


STUFF

Jalapeño peppers with a spoonful of seasoned cream cheese and top as desired. Bake until hot, 10 to 15 minutes, and serve immediately.

Jalapeño Popper Toppings


Cheddar (shredded) + reserved jalapeño tops (chopped) + tomatoes (chopped)

Gorgonzola (crumbled) + shallots (minced)

Blue cheese (crumbled) + pepitas (toasted)

Feta (crumbled) + shallots (minced) + lime zest
