We partnered with 9 amazing Chicago chefs for a live demo chef series on Goose Island's instagram to provide some relief for restaurant workers. Once-a-week you'll get a glimpse of their genius and their kitchens. We kick it off with Chef Jonathan Zaragoza from the famed Birrieria Zaragoza. Coctel de Camarones a la Zaragoza

Ingredients
For the Sauce (yields 1.5 quarts sauce)
500g ketchup
250g shrimp stock
165g lime juice
165 orange juice
25g valentina hot sauce
15g garlic, microplaned
12g worcestershire sauce
7g kosher salt
For the Coctel
2lbs cooked shrimp
Red onion, small dice
Avocados
Cherry tomatoes, small dice
Serrano chiles, sliced thin
Saltine crackers
Whisk everything together until well incorporated. Combine with poached shrimp, red onion, tomato avocado, cilantro, and serrano chiles. Serve with SALTINES!!
